Our big, tasty Mexican beans come from coffee cooperatives in the Northern Highlands of Chiapas, the tropical jungle region in the highlands of southeastern Mexico. This region is wealthy in biodiversity and natural resources, yet it is also one of the most poverty-stricken states in the country. Like other indigenous peoples of Mexico, the Tzotzil farmers are under intense pressure to give up their identities and their lands.

The beans are large, and smooth, making for easy roasting. They have excellent aroma, medium body with slight acidity, and a bright color. A mellow coffee with a softly sweet and spicy flavor – reminiscent of apricot and cloves. We use these beans straight up, and blended in both Winona’s Breakfast Blend and in our Hole in the Day Blend.
